I have wanted to try to make this recipe for a couple of weeks since I saw it in my quick food recipe book. It’s really easy to prepare but it does take some time to cook (like 1 hour + ), so this is not a meal one would make if you don’t have a lot of time. On the other side it was super tasty and it looks really good! The only thing I do not like is that there are no veggies here – but what to do…
Ingredients:
- 2 tbsp olive oil
- 1 large onion, sliced
- 5 tbsp vandaloo sauce
- about 1 kg beef, diced
- 2 ½ dl beef broth
- 2 dl coconut milk
- 250 g rice
- 1 tsp ground turmeric
Directions:
- Heat the oil in a large pot on medium heat
- Add the onion, cook for 2-3 minutes
- Add vandaloo sauce
- After 1 min add the meat and brown it on all side for about 5 min
- Add the broth and bring to a boil
- Let it simmer under a lid for 1 hour
- 25 minutes before the meat is done, boil the rice in water with turmeric
- Remove the lid and simmer for 15 min
- Add the coconut milk and simmer for 15 to 10 min
Serves: 4.
