I must admit. I love chicken satay. There is something about it that really speaks to me. I have eaten it a lot but I have never made it myself. Its one of those things that I honestly just did not think about. Until I came across the recipe in a Facebook group I am a member off. And I though oh hell yes! This is something I will make. And it was surprisingly easy. I had my co-worker over for dinner and – well at least she said she liked it! I L-O-V-E it! It all really balances each other in such perfect harmony.
Ingredients:
Chicken and marinade
- 700 g chicken filet
- 1 dl ketjap manis (sweet soy sauce)
- 1 tbsp sambal oelek (chillipaste)
- 2 tbsp neutral oil
- 1 tbsp sesame oil
- 1 tbsp ginger, grated
- 1 garlic clove, grated
- fresh cilantro, finely chopped
- 12-16 skewers
Peanut Sauce
- 1.5 dl water
- 150 g peanut butter, chunky
- the remainder of the marinade
Mango salad
- 1 large mango, cubed
- ½ cucumber, cubed
- 3 scallions, finely chopped
- ½ chillies, finely chopped and seeds removed
- 1 tsp ginger, grated
- zest of ½ lime
- fresh cilantro, finely chopped
Directions:
- Mix all ingredients to the marinade
- Slice the chicken into 1 cm thick slices lengthwise
- Thread the chicken on the skewers
- Brush it with marinade and let it soak for about 30 min
- Add the salad ingredients to a bowl and gently fold together
- Boil the water, add the peanut butter and stir well together
- Add remaining marinade, stir and let the sauce simmer a few minutes (add more water if it becomes too thick)
- Roast chicken on medium heat in a frying pan until they are finished
Optional: serve with rice
