I never knew how easy it was to make lemon curd. It is so easy to make and there are lots of ways to use it. One of which I will be posting on Wednesday – so stay tuned.
Ingredients:
- 2 egg yolks
- 75 g sugar
- 60 g lemon juice (fresh, from about 1-2 lemons)
- zest from 1 lemon
- 50 g butter
Directions:
- In a pan add water and bring to a heat
- In a steel bowl add all the egg yolks, sugar, lemon juice and zest and put over the pan as a double boiler
- Heat until it becomes thick and creamy (first it gets foamy then thick)
- Take it off the heat and mix in the butter
- Let it cool in the fridge until it is completely cold, preferably to the next day
