I was surprised how simple, delicious, yummy and not to mention easy-to-make dessert was, just remember this desert takes time to make. As you may or may not know I have a love for portioned size / mini versions of desserts.
Ingredients:
- 19 g butter
- bixit crackers (or another sweet oat biscuit / biscuit of own choice)
- 70 g cream cheese
- ⅓ can sweetened condensed milk
- 150 g lime, juiced
- 70 g whipped cream
Directions:
- Crush the crackers and butter and mix together in a bowl – set aside
- In a bowl add cream cheese – mix until soft
- Add condensed milk – mix until smooth
- Add the lime juice and mix
- Add the whipping cream and gently fold it into the mixture
- Line cupcake tins with cupcake paper and divide the mixture into these 6 molds
- Add the cracker mix, dividing it equally – gently pat down
- Freeze for 4 hours
- Remove from the cupcake tin, flip upside-down and carefully remove the cupcake paper
- Optional: add some whipped cream and a piece of lime
- Serve
