If you need a simple and delicious dessert this is the perfect for you. It works well at dinner parties and family night. The strawberries are delicious and this is definitely a taste of Summer.
I found this recipe in a cooking book a have called “Quick Food” – quick and simple for busy times. My rough translation from Norwegian. I have had this book for probably 4 years, and this is the first time I have used it.
Ingredients (4 people):
- 750 g small strawberries
- 60 g sugar
- 2 tbsp balsamic vinegar
- 125 g mascarpone
- Optional: mint leaves for decoration
Please note: I made this dessert for 5 people, using about 1 kg strawberries and the same amount of the rest and it tasted delicious.
Instructions:
1. Remove the green leaves, we have this which makes the job super easy. If you have any big berries, cut them in two. Please note, this takes time, I used about 30 mins.
2. Place all the berries in a large glass bowl, sprinkle sugar evenly over them and mix gently together so all the berries are covered.
3. Leave for 2 hours, so the berries get juicy.
4. Drizzle vinegar over the strawberries. Mix it carefully and put them in the fridge for about 30 min. (sorry forgot photo)
5. Put the strawberries in 4 glasses, drizzle the sauce and add a dash of mascarpone on top. I have added some mint leaves as well.
6. Enjoy this deliciousness!

I’m a big fan of balsamic vinegars in all flavors! I go to this wonderful olive oil & vinegar shop here in Atlanta where you can try out combinations of each…..great idea purring it over strawberries!
